In honor of my 4-year anniversary of eating plant-based, I wanted to offer you a practical way to prepare healthy, inexpensive, and tasty plant based meals. So I could not think of anyone better than Toni Okamoto, the founder of Plant-Based on a Budget, author of the Plant-Based on a Budget Cookbook, co-author of The Friendly Vegan Cookbook, and the co-host of The Plant-Powered People Podcast. In this episode, we discuss her unique upbringing that influenced her approach to food. Toni then successfully turned a passion project into her current profession teaching others how to break their meat habit without breaking the bank.
